Mit dem Restaurant Koka hat Göteborg eine wahrlich gastronomische Perle am Start. Wer hier essen geht, wird mit kreativen Interpretationen der schwedischen Küche verwöhnt. Meinen Besuch im Koka habe ich keine Sekunde bereut, dann das Menu, die Weine und der Service waren auf absolutem Top-Niveau.
Schon beim Betreten des Koka kann man erahnen, wohin die Reise auf dem Teller gehen wird. Die Ausstattung des Restaurants ist sehr nüchtern gehalten. Wände und Boden sind in einem rohen, hellen Holz gehalten. Die Decke ziert eine dunkelrote Stoffkonstruktion und in der Mitte eine bemalte Einfassung. Das Helle und die Schlichtheit wird durch die dunklen, geschwungenen Stühle durchbrochen. Obwohl alles schlicht und klar ist, wirkt das Ambiente sehr gemütlich und einladend.
Koka mit überraschenden Details
Was mir direkt auffiel, waren die originellen Details. Das Besteck befindet sich in einem Besteckkasten und man nimmt daraus, was man für den entsprechenden Gang benötigt. Die hervorragende hausgemachte Butter wird direkt aus dem „Topf“ auf einen Granitstein geschöpft, und man streicht sie dann mit einem typisch schwedischen Butterstreicher auf das Brot.
Das, was auf den Teller kommt, kann man als kulinarische Reise durch Westschweden bezeichnen. Nur die besten Zutaten aus der Region werden in der Küche auf eine moderne Art und Weise verarbeitet. Das Koka ist einer dieser klassischen Vertreter der neuen schwedischen Küche. Dass die beiden Küchenchefs Johan Björkmann und Jonas Larsson mit ihren Kreationen nicht daneben liegen können, bezeugen ein Michelin Stern und 91 Punkte im White Guide. Das Koka gehört meiner Meinung nach zu den zehn besten Restaurants in Schweden.
Tolles Menü für Feinschmecker
Die Speisekarte ist, wie für solche Lokale üblich, knapp gehalten. Im Prinzip werden sieben Gänge angeboten und man kann auswählen, ob man alle Gänge möchte oder mit fünf oder drei Gerichten zufrieden ist. Ergänzend kann man noch einen Käsegang bestellen.
Bei meinem Besuch im Koka haben mich vor allem die ganz unterschiedlichen Texturen auf dem Teller beeindruckt. Es hat oft etwas Knackiges dabei, das geschmacklich eine Extranote setzt. Jeder Gang besteht in der Regel aus drei Komponenten, die perfekt aufeinander abgestimmt sind. Schaut euch doch die folgenden Fotos an. Ich habe dazu die Menübeschreibung auf Schwedisch notiert. So lernt ihr grad, wie die Zutaten heissen ;-).

Weinbegleitung sehr zu empfehlen
Die Wechselwirkung zwischen Essen und Trinken ist im Koka ebenso wichtig, wie die Gerichte selber. Entsprechend stellt Sommelière Katrin Suzeau zu jedem Menü die passende Weinbegleitung zusammen. Auch wenn die Weinauswahl etwa mit gleich viel Kronen zu buche schlägt, wie das Essen, so kann ich die Kombination Wein und Essen wärmstens empfehlen. Geschmacklich treibt es das Genusserlebnis in eine noch höhere Umlaufbahn.
Fazit. Besucht das Koka. Leistet euch diesen Genuss. Trotz der unglaublichen Qualität der Küche ist der Preis sehr fair. Das komplette 7-Gang Menü schlägt mit 880 Sek zu buche. Das ist für diese Kategorie von Restaurants äusserst moderat. Die komplette Weinbegleitung wird mit 800 Sek verrechnet. Natürlich bekommt ihr den Wein auch glasweise.
